Well, it's almost 4:30. Kenson's visa appoinment was scheduled for 7:30 this morning. We haven't heard anything back from Haiti yet. I emailed a couple of hours ago but haven't gotten a response. So I made cookies. (Told you I bake to alleviate stress and kill time.) I of course ate a few cookies too. (Does the dried cranberries make them healthy? What about the Splenda? I also used Smart Balance's butter blend instead of regular butter or margarine. Doesn't that help?) D doesn't think fruit belongs in cookies or cake. But he said these were really good and then helped himself to like 4 or 5. (He then said he was exempt from eating vegetables at supper since he had fruit in his cookies. He is always trying to weasel his way out of vegetables!)
Cranberry Oatmeal Drops with White Chocolate Chips
2/3 cup butter or margarine
1/2 cup packed brown sugar
1/2 cup Splenda
1/2 cup white sugar
1 t. baking powder
1/4 t. baking soda
1 t. cinnamon
2 eggs
1 t. vanilla
1 3/4 c. flour
2 c. rolled oats
1 cup dried cranberries
1/2 cup white chocolate chips
Cream together margarine and sugars. Add eggs and vanilla. Add flour, baking powder, baking soda and cinnamon. Stir in oats. Stir in cranberries and chips. Drop by spoon onto ungreased cookie sheet. Bake at 375 degrees for 10-12 minutes.
