Pork Steaks with a Twist of Orange (Brown 1 large sliced onion and 1 1/2 t. minced garlic in butter on stove. Add 1 finely chopped jalepeno, 4 1/2 t. chilli powder, 1 t. salt, and 1 t. pepper. Gradually stir in 1/ cup chicken broth, 2/3 cup orange juice, and 4 pieces of cooked bacon, diced. Place roast in slow cooker; pour liquid mixture over roast. Cook on low for 4 1/2 to 5 hours until meat is tender. Can make gray using cooking juices.)

Italian Bean Soup (In stock pan combine 3 chopped celery ribs, 3 chopped carrots, 1 chopped small onion, 2 cans of chicken broth, 2 cans of drained butter beans, 1 can of diced tomatoes, and 1 t. basil. Heat through.)

Menu Planning Monday

Baked Bean Sloppy Joes (Brown hamburger. Add to 1 or 2 cans of canned baked beans. Add ketchup, brown sugar, mustard, Worchestershire, and dried onion to taste. Serve on buns. Easiest sloppy joes ever!)

Easy cheesy hashbrowns (Mix 30 oz. frozen hashbrowns with 1 cup shredded cheese and a few dried chopped onions. Put 1/2 in a greased 9 x 13 pan. Add a layer of shredded cheese. Add the remaining potatoes. Top with 1 cup of sour cream mixed with 1 can cream of chicken soup and more cheese. Bake at 350 for 50 minutes or so.)
Tuna Patties (1 can of tuna, drained, 1 egg, chopped celery and onion, and breadcumbs. Form into patties and cook in a large skillet.)

Chilli (Just a dump recipe using tomato juice, kidney beans, chilli beans, chopped steak, onion, celery, water, beef boullion, and chilli poweder, all in the slow cooker for the day.)

Menu Planning Monday

Runza Style Ground Beef Sandwiches
(Brown 2 pounds of ground beef with 1 chopped onion. Add 2 small cans of chopped ripe olives and 1 1/2 cups of cubed Velveeta cheese. Serve on hamburger or hoagie buns. Sanwiches can be wrapped in foil and frozen.)
Oven Fries
(Slice potatoes into 1/4 inch thick rounds. Place on greased cookie sheet. Spray potatoes with non stick cooking spray or drizzle with olive oil. Season with seasoned salt, garlic salt, or other herbs. Bake at 350 for 15-20 minutes, until potatoes are tender and starting to brown. You may want to flip the potatoes about halfway through so both sides of the potato get browned.)

No Soak Black Bean Soup (New recipe to me; it sounds easy, cheap, and yummy)

Crockpot Baked Beans with Jalapenos and Apples
(I tried this 2 weeks ago as a new recipe and it is awesome! You will never want Bush's baked beans again. And it's super easy.)
Corn Dog Muffins
(Combine 2 8.5 oz. packages of cornbread mix, 2 T. of brown sugar, 2 eggs, and 1 c. milk. Stir in 11 oz. of whole kernel corn and 5 hot dogs, chopped. Fill greased muffin tin 3/4 full. Bake at 400 14-18 minutes or until golden brown.)

Vegetable Beef Soup with Noodles (When I make the beef and noodles, I'll boil a large batch of beef, broth, and frozen egg noodles. One half will get thickened with cornstarch for beef and noodles and the other half will become this soup. Just add frozen mixed vegetables and some cubed cooked potatoes.)
Lettuce Salad

Cheddar Cheese and Ham Stromboli (I'm going to use this technique but stuff it with grated cheddar cheese, ham slices, and broccoli. I think I'll also make a basic cheese sauce of some kind to spread over it all. Don't know what that will be but I'll figure it out when I get there.)

Fiesta Chicken Salad (Lettuce salad topped with cooked frozen chicken strips, canned or frozen corn, tomatoes, cheese, crunched up tortilla chips and a BBQ Salsa Ranch dressing. To make the dressing, mix together BBQ sauce, canned salsa, and ranch dressing. Sounds a bit weird but it's good.)

Menu Planning Monday

Gingerbread Pancakes

BBQ Chicken Sandwiches

BBQ Chicken Tortilla Wraps (Using leftover BBQ chicken)
Lettuce salad
Fresh fruit

Chicken Boullion Noodles (Boil egg noodles until soft. Toss with butter and a few boullion cubes that have been crushed. Add warmed vegetables of your choosing and sliced almonds.)
Fruit

Glazed Chicken Strips (Grill chicken tenderloin pieces. Then toss in a mixture of soy sauce, brown sugar, ketchup and water. Place on baking sheet and cook for a few minutes longer, until glaze is set.)
Quick Curried Rice Dish (Cook 1 cup brown rice in boiling water for 30 minutes. Drain. Melt 1/2 stick butter. Add 1/2 cup finely broken thin spaghetti, chopped almonds, raisins, curry powder, salt and pepper. Cook for 3 minutes. Stir in rice and green onions.)

Menu Planning Monday

I've been on a bit of a hiatus with our holiday traveling, traveling to Haiti, bringing Kenson home, etc.. But I think I'm getting back into the swing of things now. D is home during the day for a few more weeks so I need to plan lunches for us all too. (Usually I don't do lunches because it's just leftovers or something quick.)

With Kenson, the foods we eat are generally new to him. I try to fix him a plate of what we are having. If he doesn't like the main parts of what we are eating, he loves peanut butter sandwiches so he can always have that. Or I have rice in the freezer that I thaw out and mix with either refried beans or tuna fish. He's not thrilled about vegetables yet but really likes pureed fruits. We'll just keep offering vegetables. I've tried offering pureed veggies but he refuses those.

Anyway, here's what we are eating this week and maybe next, depending on our travel schedule. I've also got a few freezer meals and quick fix things so we should be good to go.

Crock Pot Roast (I often add a can of beef broth and a package of Italian salad dressing mix.)
Hot Crash Potatoes
Mixed Vegetables

Creamed Beef and Biscuits (I'll add the mixed vegetables to the leftover beef and broth, then thicken it with cornstarch. Then into a baking dish and top it with biscuit dough dollops ala Bisquick. Bake and it's done!)

Peanut Butter Pancakes (I love flavored pancakes. These are awesome with maple syrup.)
Bacon
Frozen fruit

Taco Burgers (I'm going to use this recipe as a guideline but I'm not going to follow it all the way. I'm also going to add Monteray Jack Cheese.)

Turkey Wild Rice Soup with fruit (Believe it or not, I'm still using up left over turkey from Thanksgiving.)

Nachos (Nacho cheese, salsa, refried beans, sour cream, and my own personal favorite ingredient, a drizzle of Dorothy Lynch salad dressing), fresh fruit

Menu Planning Monday

Turkey Pot Pie, apple slices, corn
(I have turkey left over from Thanksgiving in my freezer. I'll add some broth and vegetables and then thicken. Then into a cooking pan and topped with a premade Pillsbury crust.)

Carmel Bread Pudding, turkey bacon, fresh fruit
Carmel Bread Pudding (Should really be a dessert, I swear. But I have leftover middles from some bread bowls to use up so it's a good excuse)
1 loaf of Vienna bread (or other sturdy white bread)
6 eggs
1 1/2 cups sugar
4 cups milk
1 cup light cream
2 t. vanilla

Cut bread into cubes. Beat eggs until frothy. blend in sugar. Beat in milk, cream, and vanilla. Combine bread cubes with wet ingredients. Pout into a greased 9 x 13 pan and bake at 325 degrees for 65-7- minutes.

Sauce-Combine 1/2 cup butter, 1/2 cup sugar, 1/2 cup brown sugar, and 1/2 cup whipping cream. Heat to boiling and cook for one minute. Remove from heat and add 1 t. vanilla. Serve over bread pudding.

(We normally can't get Brie locally but since it's Christmas our grocery store has it. I'm hoping to have a Brie, pear, and ham sandwich.)

Menu Planning Monday

Homemade pizza with 1/2 pepperoni and 1/2 ham and pineapple, celery and carrots
(I made this crust for the first time yesterday and left out the wheat germ. It was a super easy, very tasty wheat crust.)

Homemade chilli in Wal-mart bread bowls, fruit
(Just a dump recipe using tomato juice, ground beef, beans, onion, celery and spices)

Italian Bean Soup, lettuce salad
Italian Bean Soup
3 celery ribs, chopped
3 medium carrots, chopped
1 small onion, chopped
2 cans of chicken broth
2 cans of butter beans, drained
1 can of tomatoes, diced
1 t. basil

Put all into a large pot and heat through.

Brown sugar and salsa marinated steak, baked potatoes, mixed vegetables
(I saw a recipe for marinating/cooking pork in brown sugar and salsa; I'm going to try it with steak because that's what I happen to have.)

Cheese and veggie quesedillas, fresh fruit
(Thinly slice whatever vegetables you want; I'm using red pepper and onion as well as some cilantro leaves.) Layer a layer of shredded cheese, the vegetables, and another layer of cheese on a flour tortilla. Add another flour tortilla on top and cook. You can do this in a regular skillet/griddle on your stove or if you have an indoor or outdoor grill, you can do it there too. You don't need a fancy quesedilla maker. To make it easier, start with the bottom tortilla in whatever you're cooking on so you don't have to try to transfer an uncooked quesedilla to the pan/grill. Then build the quesedilla.

Menu Planning Monday

I made a turkey for our church's Thanksgiving dinner but they wanted you to bring it in deboned, etc.. So I kept the carcass and boiled it for some turkey broth. Now I'll just have to add noodles and veggies.

Minute Steak Crock Pot Supper, Magic Mousse Jello with strawberries
I'm going to use the recipe I've linked but use minute steak instead. I also use reduced fat soup and sour cream. With the cheese in the recipe, I use half low fat and half regular. Reduced fat cheese is one thing that isn't always as good as regular; it doesn't melt nearly as nice and can do funny things if you use it when cooking. I also don't brown the meat ahead of time; this saves both time and fat calories since you are asked to brown it in oil.

Thanksgiving Meal (at my house, I think...my grandma is in the hospital so the plans are a bit up in the air)
